Sausage & Pepper Pasta

Amy cooked up leftovers for lunch at the other day and it was really good. No recipe! She just listed off a few things that they threw in with a jar of pasta sauce.Ingredients:
1 box Mini Penne Pasta
1 jar Prego Three Cheese Pasta Sauce
1 pkg Turkey Sausage (cut to shape of pasta)
1 green pepper (small slices)
1/2 red pepper (small slices)
1 onion (chopped)
2 garlic cloves (minced)
Parmesan cheese

Cook pasta. Heat oil in a skillet. Add garlic and cook until fragrant. Add onions and peppers. Cook until tender. Add sausage. Cook for a few minutes. Add sauce. Simmer until pasta is done. Combine and sprinkle with freshly grated Parmesan cheese.

White Chicken Chili

Really, really good and easy.
Ingredients:
3 chicken breasts
1 medium onion (chopped)
1 garlic clove (minced)
1 tbsp vegetable oil

Heat oil in large pot. Add garlic and cook until fragrant, add onion. Saute chicken until cooked. then add:

2 cans (15oz) great northern beans (drain and rinse)
1 (14.5 oz) can of chicken broth
2 cans (4 oz) of green chilies
1 tbsp jalapenos
1 tsp salt
1 tsp cumin
1 tsp oregano
½ tsp black pepper

Simmer uncovered for 30 minutes. Remove from heat and add:

1 cup sour cream (I used fat free)
½ pint whipping cream (I used 1 cup cream + 1 cup skim milk)

Stir in and let sit for 5 minutes. Serve with french bread and cheese.

Shrimp & Corn Pasta

I grilled the tomatoes, corn and shrimp on the BBQ...the recipe says otherwise.
Ingredients:
1 lb shrimp
4 corn on the cob
6 plum tomatoes (I used a dozen grape tomatoes)
1 box bow tie pasta
3 tsp olive oil (divided)
1 cup chicken broth
1/2 cup heavy whipping cream
1 tsp chipotle-pepper sauce (I used chipotle tabasco sauce)
3/4 tsp salt (divided)
1/4 tsp pepper
cilantro

Heat grill. Skewer the tomatoes and shrimp and brush with olive oil and sprinkle with salt. Add corn on the cob, tomatoes and shrimp to the grill. Grill until charred and cooked through. Cook and drain pasta. Cut kernals from corn on the cob, dice tomatoes (don't need to dice if you used the small grape tomatoes) and peel shrimp. Add chicken broth to the empty pasta pot and bring to a boil. Add corn, pepper, cooked pasta, diced tomatoes, cream, chiptole sauce and salt. Toss pasta with grilled shrimp. sprinkle with chopped cilantro.

Sweet & Sour Chicken

This had a really yummy sauce. Instead of frying & baking...I just fried them completely. Ingredients:
1/2 cup flour
1/2 cup cornstarch
3 eggs (beaten)
4 chicken breasts (cut into chunks)

Dip chicken in beaten eggs and then in flour mixture. Fry completley in vegetable oil - OR - brown lightly in oil in frying pan on medium heat. Place in oblong glass baking dish. Pour sweet & sour sauce over chicken. Bake in 350 degree oven for 45 minutes, turning once or twice.

Sweet & Sour Sauce:
1 cup chicken broth
1 1/2 cup sugar (1 cup brown sugar, 1/2 cup splenda)
1/2 cup vinegar
8 tbsp. ketchup
2 tbsp. soy sauce

Bring all ingredients to a low boil. To thicken sauce, use cornstarch and water.

Tortellini Soup

I made the mistake of putting this in the crock pot and overcooked the tortellini.Ingredients:

6 cups water
3 cans chicken broth
1 can cream of chicken soup
2 cups chicken
1 cup onions
1 cup carrots
2 garlic cloves
1/2 tsp basil
1/2 tsp oregano
1 pkg frozen cheese tortellini
1 pkg frozen broccoli

Cook chicken until almost done. In a large pot combine everything except tortellini and broccoli. Bring to a boil, add tortellini. Simmer uncovered 30 minutes. Add broccoli. Simmer additional 5-10 minutes or until broccoli is tender. Serve with freshly grated Parmesan cheese.

Tortilla Soup

I've had this a few times lately and finally looked up a recipe.
Ingredients:
1 medium onion (chopped)
2 cloves garlic (chopped)

1 can chicken (12.5 oz) do not drain
1 tsp cumin
1/2 tsp chili powder
1/4 tsp salt
1/4 tsp pepper

1 can chicken broth (14 oz)
1/3 cup water or chicken broth
1 can kernal corn (15 oz) do not drain
1 can black beans (drained & rinsed)
1 can Mexican-style stewed tomatoes (14 oz) cut up

Toppings:
corn tortillas
cilantro, avocados
cheese, sour cream

Heat oil in pan over medium heat and sautee onion and garlic. Add can of chicken and spices. cook 4-5 minutes, stirring frequently. Stir in broth, undrained corn, rinsed black beans and tomatoes. Increase heat to high and bring to a boil. Reduce heat, cover and simmer for 15 minutes.

Turkey & Broccoli Casserole

I had to call my mom for the recipe. I remember having this as a kid with Thanksgiving turkey leftovers. I served it over rice (surprise, surprise). Can substitute chicken for turkey.
Ingredients:

Leftover Turkey
Cream of Chicken Soup (I used 97% FF)
1/2 cup mayo (I used low fat)
1/2 tbsp lemon juice
1/2 tsp curry powder
Broccoli
Cheese (I used colby/jack)

In a 8x8 pan, spread pieces of turkey across the bottom. Mix soup, mayo, lemon juice and curry together and spread over turkey. Add a layer of broccoli and sprinkle with cheese. Bake at 350 for about a half hour (or until bubbly).
