Recipe From: Amy Griffeth's Sister-in-Law
For Monday Night Football, Blake loves to eat pizza. We used to order out, but Sammie loves to roll out her own dough! We tried this new recipe and it was great! Depending on what meats we have left over, that is the pizza theme. Since coming home from Costa Rica, I haven't really been cooking yet...so there were no leftovers. But, this was easy and really good!
Pizza Dough Ingredients:
2 tbsp yeast1 tbsp salt
1/4 c. brown sugar
5 c. flour
3 1/2 c. hot water
Gradually stir in 3 1/2 c more flour so dough is not sticky.
Knead 10 minutes.
Let rise 30 minutes.
350 degrees for 25 minutes. (Bake 10-15 minutes, then add toppings and bake until cheese is melted)
Pizza Ingredients:
Chicken Breast (boiled & shredded)
BBQ Sauce
Red Onion
Pineapple Tidbits
FRESH Mozzarella Cheese
Boil and shred the chicken OR slice and marinate with seasonings and bbq sauce. Broil on low and don't overcook, as it will cook longer on the pizza. Combine with pineapple and sliced red onion. Spread bbq sauce on the pizza crust, top with chicken/pineapple/onion mixture. Tear pieces on mozzarella and add all over pizza.
