Sausage Jambalaya

Blake discovered a Cajun Meat Market - Herbert's on Dairy Ashford. He brought home jalapeno sausage, a stuffed whole chicken (de-boned) and stuffed jalapenos. We ate well for a few days. The sausage was great in the jambalaya.
Ingredients:
1 link smoked sausage (thinly sliced)
1 cup onion (chopped)
1 cup celery (chopped)
1 can diced tomatoes
2 cups water
1 pkg Zatarain's Jambalaya Dinner Mix (original flavor)
1 cup frozen corn

Heat oil in a skillet and saute onion, celery and sausage for 5 minutes. Add tomatoes and water. Bring to a boil. Stir in jambalaya mix. Reduce heat to low. Cover and simmer 20 to 25 minutes or until rice is tender. Remove from heat and add frozen corn. Let stand until corn is cooked in. Fluff rice with a fork and serve.

Chicken & Sausage Gumbo

Start by making a roux:
2 tbsp butter
2 tbsp flour

On medium high heat, melt them together, whisking the whole time. You want to whisk it until it becomes a light brown color. After it turns a light brown color I add the following:

1 tsp. Dijon mustard
3 Roma tomatoes (blended in the blender with a little water to make them smooth)
2 tsp chili garlic sauce
1 tbsp molasses
1 tsp salt
1 can chicken broth
1 small onion (chopped)
1 green pepper (chopped)
1/4 tsp pepper
2 bay leaves
1 chicken breast (cooked and shredded)
1 turkey sausage (sliced)

Cover and let it simmer for at least 30 minutes to let flavors blend. Serve over cooked rice.

Sausage, Broccoli & Brown Rice

Blake loved this. We used turkey sausage.
3 Tbsp extra virgin olive oil
1 red bell pepper (diced)
1 clove garlic (minced)
1 lb cheese filled chicken sausages (thinly sliced)
4 Cups broccoli florets (steamed)
4 Cups cooked brown rice
1/4 Cup parmesan cheese (grated)
salt and pepper to taste

Heat olive oil into a large skillet over medium heat. Saute bell pepper for 5 minutes or until softened. Stir in garlic; cook for 1 minutes then add chicken slices. Cook for 5 minutes or until chicken is browned on both sides. Add broccoli, rice and parmesan cheese. Cook for 2 minutes or so, then season with salt and pepper.

Sausage & Pepper Pasta

Amy cooked up leftovers for lunch at the other day and it was really good. No recipe! She just listed off a few things that they threw in with a jar of pasta sauce.Ingredients:
1 box Mini Penne Pasta
1 jar Prego Three Cheese Pasta Sauce
1 pkg Turkey Sausage (cut to shape of pasta)
1 green pepper (small slices)
1/2 red pepper (small slices)
1 onion (chopped)
2 garlic cloves (minced)
Parmesan cheese

Cook pasta. Heat oil in a skillet. Add garlic and cook until fragrant. Add onions and peppers. Cook until tender. Add sausage. Cook for a few minutes. Add sauce. Simmer until pasta is done. Combine and sprinkle with freshly grated Parmesan cheese.

Smoked Brisket & BBQ Sauce

Been hanging on to this BBQ sauce recipe for awhile, and just finally tried it. We smoked 10 lbs of brisket this weekend at the Property.
Ingredients:
1 1/2 cups ketchup
1 1/2 Tbsp lemon juice
4 Tbsp worstershire sauce
4 Tbsp brown sugar
3 Tbsp dijon mustard
2 Tbsp apple cider vinegar
1 tsp honey
1 tsp black pepper
pinch of salt

Combine and simmer over low heat.
