Sweet & Sour Chicken

Recipe From: Mom
This is good, but not great considering the work it takes to make it. I would rather just do something easier that is just as tasty.
Ingredients:

6-8 chicken breasts
3 eggs & cornstarch
1 cup brown sugar
1/2 cup ketchup
2/3 cup vinegar
1/2 cup water
2 tbsp soy sauce
1 tsp accent
1/2 tsp salt

Boil chicken for 10 minutes. Mix the eggs and cornstarch and coat the chicken. Fry until browned. Mix the remaining ingredients and combine with chicken in a baking dish. Bake at 300 for 20-30 minutes. Turn chicken over and bake for another 20-30 minutes. Serve with steamed vegetables.

Spaghetti & Meatballs

Yum

Ingredients:

1 lb thin spaghetti noodles
1 lb extra-lean ground meat
1 onion
2 cans tomato soup
2 cans tomato sauce
1 can water
salt & pepper
Italian seasoning & oregano

Cook pasta. Dice onion. Use 1/2 of it and mix with hamburger meat and salt/pepper. Form into meatballs. Sprinkle with italian seasoning and oregano. Cook in the broil on low. In a large saucepan combine: soup, sauce, water, and spices. Simmer and season to taste.

Ginger Snap Cookies

Ray discovered these at the church a few weeks ago. Michelle tracked down the recipe and we finally made them last night. I realized I have the same recipe in my recipe collection 3 different times...I can't believe I've never made them.
Ingredients:


1 cup brown sugar
3/4 cup shortening
1 egg
1/4 cup molasses
2 1/4 cup flour
2 tsp baking soda
1 tsp ginger
1 tsp cinnamon
1 tsp cloves
1/2 tsp salt

Blend brown sugar and shortening...mix and add egg and molasses...mix and add the remaining ingredients. Roll into balls and roll in granulated sugar. Bake at 375 on greased cookie sheet for 10 minutes.

BBQ Drumsticks

The recipe I found said to bake it in the oven, but I tried the crockpot. It tasted great, but ended up not really being drumsticks because it just fell right off the bone. I served it basically as a salad and Naan bread...Blake ate it over rice. Sorry, no pics...camera is broken and new one is one the way!

Ingredients:

1 pkg (10) frozen chicken drumsticks
3 tbsp butter
1 tbsp onion powder
5 tbsp brown sugar
2 tbsp Worcestershire sauce
2 tbsp mustard
1 cup ketchup
1/2 cup water

In a small saucepan melt butter and add: onion powder, sugar, Worcestershire sauce and mustard. Mix well. Dilute ketchup with water and add to sauce mixture. Let simmer for 15 minutes. Dump over drumsticks in crockpot. I never know how long to cook with a crockpot, so I put it on High for 4 hours OR bake at 425 for 45 minutes (covered in 9x13 dish)

Chocolate, Chocolate, Chocolate-Chip Bundt Cake

This cake is famous in the Holiday Family. If you love chocolate, it is the best. I promise!
Ingredients:
1 pkg Devils Food Cake
1 pkg instant chocolate pudding (3.9 oz)
1 3/4 cup milk
2 eggs (beaten)
1 pkg semi-sweet chocolate chips (12 oz)
powdered sugar

Mix together the cake, pudding, milk and beaten eggs. Blend for a few minutes. Add the chocolate chips. Spray bundt pan with flour spray and bake at 350 for 50 minutes. Let cool at least 30 minutes and sprinkle on powdered sugar.

Mini muffins: 350 for 12 minutes

Banana Chocolate Chip Mini Muffins

When I was a teenager, my young women's leader made banana bread for us. I've changed the recipe to mini muffins with chocolate chips instead of nuts...much better! I usually double (or 1 1/2) the recipe depending on how many ripe bananas I have. Blake either takes them to work or I freeze the extras.
Ingredients:

1 3/4 cup flour
2/3 cup sugar (I use half splenda)
2 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1 cup ripe bananas (mashed)
1/3 cup butter (I use half low fat)
2 tbsp milk
2 eggs
1/4 cup mini chocolate chips (they melt better than regular sized)

In a mixing bowl combine 1 cup of the flour, all the sugar, baking powder, baking soda and salt. Then add the mashed bananas, butter and milk. Mix on low speed until blended...then on high speed for 2 minutes. Add eggs and remaining flour. Beat until blended, then add chocolate chips. Use flour spray to grease pan. Bake at 350 for 13 minutes (mini muffins), 20-22 min (cupcake size), 60 minutes (loaf). Let cool on a wire rack.

Mini Sloppy Joes

Everything is better when it is smaller. Of all the sloppy joes I've had in the past, none have brown sugar in them....genius!
Ingredients:

1 lb extra lean ground beef
1/2 yellow onion
2 8oz cans tomato sauce
1/2 cup ketchup
2 tsp mustard
1/3 cup brown sugar
1 pkg dollar size rolls

Brown ground beef and onions. Drain off excess fat. Add remaining ingredients and cook over low about 10 minutes. Serve on dollar size rolls.
